My relationship with tequila didn’t begin with a fiery party shot followed by a wince. It began quietly—with a sip. I was expecting the harsh burn many associate with tequila, but what I found instead was clarity, smoothness, and an elegance I hadn’t known existed. That single sip changed everything.
It introduced me to Blanco—the purest expression of tequila. Unlike aged tequilas that rest in oak barrels and take on new flavours, Blanco is bottled straight after distillation. Sometimes it rests briefly in stainless steel tanks, but its essence remains unchanged: fresh, crisp, and true to the agave.
From Lightning to Legacy
Tequila’s roots trace back to ancient Mexico. According to legend, lightning once struck an agave field, cooking the piñas and releasing their sweet sap. Naturally fermented, it became pulque, a low-alcohol drink enjoyed for centuries. When the Spanish arrived in the 16th century, they introduced distillation, transforming pulque into a stronger spirit known as mezcal wine—the ancestor of tequila.
By the late 1800s, Don Cenobio Sauza defined tequila as a spirit made specifically from Blue Weber Agave in Jalisco, setting the foundation for modern production. In essence, the first distilled tequila was Blanco—clear, vibrant, and unaged.
Don Julio Blanco: A Modern Classic
The Blanco that opened my eyes was Don Julio Blanco. Its founder, Don Julio González, revolutionized tequila-making by treating it not just as a spirit, but as a luxury. From planting agaves farther apart so they matured richer, to cooking piñas in traditional ovens, and distilling twice in copper pot stills, his methods elevated tequila into an art form.
The result? A crystal-clear spirit with layers of flavour: citrus brightness, sweet agave, and a clean, smooth finish. It’s why Don Julio Blanco has become my benchmark.

Exploring Blanco taught me its versatility. Neat, it reveals its complexity. On the rocks, it’s refreshing. In cocktails, it transforms classics.
